Why do you use a Wood-Fired Brick Oven?
We wanted the best. Ask any chef in the world and they will tell you there simply is not a better way to cook a pizza. The oven is key in giving each pizza it’s own unique character and taste. The wood imparts a smoky, delicious flavor, while the hot deck (over 700 degrees) creates a crispy outer crust with a tender and moist inside.
Do you cook in a pan or on a screen?
Well, neither. Your pie bakes directly on the deck – the flavor profile is created the moment it hits the brick and begins to sizzle…delicious!
How many pizza’s can you cook at one time?
Our oven fits about six pies at a time. We can’t crank out the volume of a conveyor type oven – but each pie is worth the wait.
Do you make your own dough?
Yes, our dough is made fresh, then allowed time for the yeast to ferment, thus building character and texture as well as producing a more “complex” flavor (much like a fine wine).
And your sauce?
We start by sautéing fresh onion and garlic in extra virgin olive oil, and then add the purest and finest tomato products available. That means no high fructose corn syrup, hydrogenated oils or artificial preservatives.
What type of products do you look for to offer your customers?
Simple, the best we can find. We want to offer others what we would serve our family and friends. From our dough to our sauce and cheese, freshness and quality are key.
